France 2023Restaurant Blanc
We designed a restaurant themed around materials on rue de Longchamp, near Place Trocadero in Paris, for the two-Michelin star chef Shinichi Sato, formerly of Passage 53. The facade is a minimalist mesh of bronze metal that blends in with the street.
Utilizing the deep plan configuration characteristic of Parisian buildings, each space was fitted with identifiable materials to create a variety of worlds so that guests can enjoy a narrative sequence from the entrance to the kitchen.
The entrance and bar counter space create an air of glamour with walnut and bronze, while the circular main dining room is a concentric ring of 60x10mm white ash wood that envelops guests like a bird’s nest. The walls are wrapped in 30x6mm white, sound-absorbing upholstered bars that create relief at varying angles.
The chef’s table is located in a corner of the kitchen, which, as the restaurant’s name suggests, is finished in pure white, allowing diners to enjoy the chef’s tastes while watching the kitchen work from inside a small glass ball.
Downstairs, the lounge was realized as a glowing travertine cave with a vault composed of layers of travertine (200x10mm).
